Ingredients
Preheat oven to 450F.
Grease a 9 inch skillet or a muffin pan and place in oven to heat.
Beat egg in a mixing bowl.
Add milk and oil; stir in Dixie Lily Self-Rising Corn Meal – mix well.
Pour batter into hot pan/skillet and bake 20 to 25 minutes until golden brown.
Serve Dixie Lily Cornmeal muffins with Dixie Lily Spanish Bean Soup.
For Butter Milk Cornbread omit the egg and substitute 1 1/2 cups buttermilk for milk

Boil 4 1/2 cups water with 1 teaspoon salt
Slowly stir in 1 cup of Dixie Lily Yellow Grits
Cook for 3 to 5 minutes over direct heat, stir frequently
Delicious when served with butter or gravy.

Stir 1 cup of Dixie Lily Grits and 1 teaspoon of salt into 4 cups of boiling water, return to boil
Cover, reduce heat to low and simmer for 5 minutes, stirring occasionally.
Serve hot.
For thinner grits, add more water; for thicker, creamier grits, cook longer.

Measure 1 cup of Dixie Lily Hush Puppy Mix into a bowl.
Add 1 cup plus 2 tablespoons of water and stir. Let stand for 10 minutes without stirring
Cook fish/seafood using Dixie Lily Seafood Breader.
Using a teaspoon, drop the Dixie Lily Hush Puppy Mix batter into the hot oil so that it forms a ball.
Turn as needed to ensure even cooking until brown.
Drain on absorbant paper
Dip spoon in water between each spoonful of batter.
For larger Dixie Lily Hush Puppies, use a tablespoon.

Heat 1 inch vegetable oil in a skillet, or oil as recommended in a deep fat fryer, to 350F
Moisten fish or seafood with water and drain excess.
Pour Dixie Lily Seafood Breader Mix onto a plate or into a plastic bag. Roll or shake seafood in mix until evenly covered.
Fry a few pieces at a time until golden brown.
Remove and drain.
Heat 1 inch vegetable oil in a skillet, or oil as recommended in a deep fat fryer, to 350F
Stir 3/4 cup of water into 1 cup of Dixie Lily Seafood Breader Mix. (For thinner batter, use more water).
Dip seafood into batter, drain excess
Fry a few pieces at a time until golden brown.
Remove and drain.
Don’t just keep it for seafood, try with chicken and vegetables too.
For a thicker batter coating, roll in dry breader mix after coating with batter.
Don’t waste that hot oil – make some Dixie Lily Hush Puppies as well.

Bring 3 cups of water, 2 tablespoons of butter and 2 teaspoons of salt to boil a boil.
Add Dixie Lily Rice and contents of seasoning packet and return to a boil. Cook uncovered for 1 minute, stirring once.
Cover, reduce heat to low and simmer for 20 minutes.
For a variation, use chicken broth instead of water.

Soak beans overnight in salt water to cover.
When ready to coak, drain off salt water.
Bring 6 cups of water to boil and add beans.
Add contents of spice packet and reduce to simmer until beans are soft.
Add diced potatoes and chopped pork sausage during the simmer stage.
Soup always tastes better with some corn bread…
